Method
Main: Mini Turkey & Veggie Meatballs with Tomato-Butternut Sauce
Make the meatball mixture
In a medium bowl combine 12 oz lean ground turkey, 1 tbsp grated carrot, 2 tbsp grated zucchini (squeezed to remove excess water), 2 tbsp finely chopped spinach, 1 tbsp plain breadcrumbs, 1 tbsp grated Parmesan, 1 large egg, 1 tsp garlic powder, 1 tsp salt, and 1/4 tsp black pepper. Mix gently with clean hands or a fork just until combined—overmixing makes meatballs tough.
Form mini meatballs
Wet your hands lightly. Shape the mixture into 18–20 small (about 1-inch) meatballs so they cook quickly and are kid-sized.
Cook the meatballs
Heat 1 tbsp olive oil in a nonstick skillet over medium heat. Add the meatballs in a single layer (do in two batches if needed). Cook 2–3 minutes without moving to brown, then gently roll to brown other sides, total 6–8 minutes, until cooked through (internal temp 165°F / 74°C). Remove meatballs to a plate and set aside. Leave any browned bits in the pan for sauce flavor.
Sauce
Build the sauce
Stir in 1 cup crushed tomatoes, 1/2 cup butternut squash puree, and 1/4 cup low-sodium broth. Add 1/2 tsp dried basil, 1/4 tsp dried oregano, 1/4 tsp salt, and 1/2 tsp honey or maple syrup to taste. Bring to a gentle simmer and cook 4–5 minutes to meld flavors and slightly thicken.
Return meatballs to sauce
Nestle the cooked meatballs into the sauce, spooning sauce over them. Simmer gently 3–4 minutes so meatballs finish cooking and absorb flavor. If sauce thickens too much, add 1–2 tbsp water or broth to reach a spoonable consistency.
Carb: Mini Whole-Wheat Pasta Shells
Veggie Side: Steamed Peas & Corn
Serve
Portion about half the pasta onto a child's plate (adjust for appetite). Top with 6–8 mini meatballs and spoon warm tomato-butternut sauce over meatballs and pasta. Add a side scoop of peas & corn. Sprinkle 1 tsp grated Parmesan and add torn basil leaf if using. Let cool slightly to a kid-friendly temperature before serving.
Store leftovers in an airtight container in the fridge up to 2 days. Reheat gently in microwave or on stove with a splash of water to loosen sauce.
