Confirm each keg is properly chilled to serving temperature (generally 36–45°F / 2–7°C depending on style: lagers lower, ales slightly higher). Attach each keg to its assigned cleaned tap line and set regulator pressure from the CO2 tank according to beer style and line length (typically 10–14 psi for most draft lagers, 12–18 psi for IPAs; consult keg and system specs). Ensure all connectors and faucets are tight and free of leaks.

Line and keg preparation

Verify tap lines have been cleaned within recommended schedule. Flush a small amount through each faucet to remove any standing beer, confirming clarity and appropriate carbonation level. If foam or off-odors are present, perform a full line clean with approved cleaning solution before serving.

Tap line cleaning check

Use clean, chilled glassware. Rinse each glass with cold water before pouring to remove dust and slightly chill the vessel. For ales (Gummy Worm IPA, Lagunitas IPA, Blue Moon), tilt the glass at 45° and open the tap fully, aiming the liquid down the side of the glass. When the glass is about three-quarters full, tilt upright and finish pouring to create a 1/2–1 inch head. For lagers and lighter beers (Kirin, Sapporo, Corona, Heineken, Modelo Especial, Coors Light), use a similar 45° tilt but allow a slightly smaller head (about 1/4–1/2 inch) for a crisp presentation. For Twisted Tea, pour gently to preserve carbonation and avoid excessive foam.

Pouring technique

Label each tap clearly so customers/staff can identify selections. Offer appropriate garnishes only where customary (e.g., lime wedge for Corona). Maintain a rotation of glassware and keep backups chilled. Monitor keg levels frequently and have replacement kegs or bottled/back-up options ready in a chilled well to minimize downtime.

Serving suggestions

Keep the tap area clean and sanitized, wipe spills promptly, and empty drip trays regularly. Monitor CO2 tank pressure and secure tanks to prevent tipping. Train staff on responsible service practices and local alcohol service laws, including ID checks and refusal of service when necessary.
