Prepare ingredients

Measure and chop the onion and mince the garlic. Have tomato paste, spices, broth, soy sauce and seasonings ready.

Heat a large skillet over medium-high heat and add 1 tablespoon olive oil.

Add the chopped onion to the hot skillet and cook 3–4 minutes until softened and translucent, stirring occasionally.

Add the minced garlic and cook 30 seconds until fragrant, stirring to prevent burning.

Add the ground beef to the skillet. Break it up with a spatula and cook 5–7 minutes until no longer pink and beginning to brown.

Stir in the ground cumin, smoked paprika, chili powder, salt and black pepper. Cook 1 minute to toast the spices.

Mix in the tomato paste, soy sauce, brown sugar and pour in the 1/4 cup broth. Stir to combine, scraping browned bits from the pan. Reduce heat to medium-low and simmer 3–4 minutes until mixture thickens slightly. Taste and adjust seasoning if needed.

Remove skillet from heat and let the beef mixture rest 2 minutes so juices redistribute.

Wrap and Assembly

Warm the tortillas for easier rolling: heat a dry skillet over medium heat and warm each tortilla 15–20 seconds per side or wrap stack in a damp paper towel and microwave 20–30 seconds.

Lay one warm tortilla flat on a clean surface. Spread about 2 tablespoons sour cream (or Greek yogurt) down the center of the tortilla.

Spoon about 1/4 of the beef mixture (roughly 1/2 cup) down the center of the tortilla over the sour cream.

Top the beef with shredded lettuce (about 1/2 cup), shredded cheddar (about 1/4 cup), diced tomato (about 1/4 cup) and 1/4 of the sliced avocado. Add hot sauce if using and squeeze a little lime juice over the filling.

Fold the sides of the tortilla in slightly, then roll tightly from the bottom to enclose the filling. Repeat with remaining tortillas and filling.

Optional — crisp the wraps: heat a skillet over medium and place seam-side down; cook 1–2 minutes per side until golden and sealed, pressing gently with a spatula.

Slice each wrap in half on a diagonal and serve with extra lime wedges and hot sauce on the side.
