In a mixing bowl, whisk together the flour, baking powder, sugar, and salt. In another bowl, mix the milk, egg, vanilla extract, and melted coconut oil. Combine the wet and dry ingredients and stir until just combined.

Cook the Pancakes

Heat a non-stick skillet or griddle over medium heat. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side. Repeat with remaining batter.

In a bowl, combine the diced pineapple, mango, red onion, jalapeño, lime juice, and cilantro. Mix well and set aside to let the flavors meld.
