Preparation
Prepare the Seafood
Boil or steam the shrimp until pink and cooked through, about 2-3 minutes. Shuck the oysters and place on ice. Boil the lobster tails for 8-10 minutes, then cool and slice in half lengthwise. Pat the scallops dry.
Marinate the Scallops
In a bowl, combine olive oil, soy sauce, and lemon juice. Add scallops and marinate for 15-20 minutes in the refrigerator.
Prepare Tuna Crudo
Slice the tuna into thin strips and arrange on a plate. Drizzle with olive oil and soy sauce.
Make Cucumber Jalapeno Mignonette
Finely chop cucumber and jalapeno. Mix together with lime juice and a pinch of salt.
Assembly
Assemble the Seafood Tower
Layer the boiled shrimp, shucked oysters, and halved lobster tails on a large platter. Arrange the marinated scallops and tuna crudo on the sides. Serve with cocktail sauce, horseradish, and cucumber jalapeno mignonette on the side.
