Rice

Cook rice
Rinse 2 cups short-grain rice under cold water until the water runs clear (about 3–4 washes). Drain. Combine rinsed rice, 2.5 cups water and 1/4 tsp kosher salt in a rice cooker or medium saucepan. If using a saucepan, bring to a boil, then reduce heat to low, cover and simmer 15 minutes. Turn off heat and let sit, covered, 10 minutes. Fluff with a fork and keep warm.

Zucchini
In same skillet, add 1/2 tbsp oil, add julienned zucchini (1 cup) and a pinch of salt. Sauté 2–3 minutes until slightly golden but still firm. Remove and set aside.

Bean sprouts
Bring a small pot of water to a boil. Blanch 2 cups bean sprouts 30–45 seconds until bright and slightly tender. Drain and immediately rinse under cold water. Squeeze out excess water. Toss with 1/2 tsp toasted sesame oil and a pinch of salt. Set aside.

Spinach
Blanch 4 cups trimmed spinach in boiling water 30–45 seconds until wilted. Drain and rinse under cold water. Squeeze out excess moisture and roughly chop. Season with 1/2 tsp sesame oil and a pinch of salt. Set aside.

Scallions & cucumber
Thinly slice 3 scallions. If using cucumber (1/2 cup), slice or julienne and toss with a pinch of salt. Keep these ready for assembly.
Protein (Beef)

Marinate and cook beef
Combine 1 lb ground or thinly sliced beef with 2 tbsp soy sauce, 1 tsp sugar, 1 tsp sesame oil, 2 minced garlic cloves and 1/4 tsp black pepper. Let sit 10–15 minutes while preparing vegetables. Heat 1 tbsp vegetable oil in a skillet over medium-high heat. Add beef and cook, breaking up ground meat until browned and cooked through (4–6 minutes) or if using slices, sauté until cooked and edges slightly caramelized (3–5 minutes). Remove from heat and keep warm.

Make gochujang sauce
In a small bowl combine 3 tbsp gochujang, 1 tsp rice vinegar, 1 tsp honey or sugar, 1 tsp toasted sesame oil, 1/2 clove minced garlic and 1 tbsp water. Whisk until smooth. Taste and adjust: add more honey if too spicy, or more water to thin. Set aside.

Assemble bowls
Divide warm rice among 4 bowls (about 1/2 cup cooked rice per serving as a guideline — adjust to appetite). Arrange portions of carrots, zucchini, mushrooms, bean sprouts, spinach, cucumber (if using) and scallions on top of each bowl in separate sections for a colorful presentation. Add cooked beef to each bowl. Place one fried egg on top of each bowl. Sprinkle toasted sesame seeds over all and drizzle a few drops of sesame oil if desired.
