Prepare the Filling
In a mixing bowl, combine the lobster meat, cream cheese, chopped scallions, and grated carrot. Mix until well combined and season with salt and pepper to taste.
Assemble the Rangoon
Take a wonton wrapper and place about 1 tablespoon of the lobster mixture in the center. Moisten the edges of the wrapper with water, fold it over to form a triangle, and press the edges to seal. Repeat with the remaining wrappers and filling.
Fry the Rangoon
Heat oil in a deep frying pan over medium heat. Once hot, carefully add the wontons in batches, frying until golden brown and crispy, approximately 3-4 minutes per batch. Remove and drain on paper towels.
Serve
Serve the crispy lobster rangoons hot with the sweet & sour sauce on the side for dipping.
