Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker or pot, and cook according to rice cooker instructions or bring to a boil then simmer for about 20 minutes. Once cooked, let it sit covered for 10 minutes.
Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice. Let the rice cool to room temperature.
Prepare Spicy Tuna Filling
Dice the sashimi-grade tuna into small pieces and mix with mayonnaise and sriracha in a bowl. Adjust the spiciness to taste.
Assemble the Rolls
Place a sheet of nori on a bamboo sushi mat, shiny side down. Wet your hands and take a handful of sushi rice, spreading it evenly over the nori, leaving a small border at the top. Place a line of spicy tuna mixture, avocado, and cucumber in the center.
Roll the Sushi
Using the bamboo mat, roll the sushi tightly away from you, pressing gently. Seal the edge with a little water. Repeat with remaining ingredients.
Slice and Serve
Using a sharp knife, slice the rolls into bite-sized pieces and sprinkle with sesame seeds. Serve with soy sauce and wasabi on the side.
