Buy and chill
Purchase 12 fresh shucked oysters on the half shell from a reputable fishmonger the same day you plan to serve. Keep them cold on ice while transporting and store in the coldest part of the refrigerator until ready to serve (up to 24 hours).
About 30 minutes before serving, pack a shallow serving platter or tray with crushed ice or rock salt to create a stable bed. Nestle oysters on the half shell into the ice so they sit level and do not tip. Keep refrigerated until plating to maintain food safety.
Slice 2 lemons into wedges and arrange on the platter alongside the oysters.
Classic Mignonette
Make mignonette
Combine 1/4 cup red wine vinegar, 2 tablespoons finely minced shallot, 1 teaspoon coarsely ground black pepper, 1/2 teaspoon granulated sugar, and 1/4 teaspoon fine sea salt in a small bowl. Stir until the sugar and salt dissolve. Taste and adjust: add a few more drops of vinegar if you prefer more acidity or a pinch more sugar to soften the bite.
Let the mignonette rest at least 10 minutes at room temperature to allow flavors to marry. Transfer to a small serving dish or spoon for table service.
Bright Herb-Citrus Sauce
Prepare herb-citrus sauce
Finely chop 2 tablespoons flat-leaf parsley and 1 tablespoon chives. In a small bowl whisk together chopped herbs, 1 tablespoon fresh lemon juice, 1 teaspoon extra-virgin olive oil, 1/8 teaspoon fine sea salt, and 1/8 teaspoon freshly ground black pepper. Taste and adjust acidity or salt. This sauce should be bright and lightly seasoned — serve in a small spoon or ramekin so guests can drop a small spoonful onto an oyster.
Optional Heat & Crunch
If using, spoon 1/4 cup prepared cocktail sauce into a small bowl and add 4 drops hot sauce; stir to combine. Place toasted panko in a separate small dish for a crunchy topping option. These provide contrast for guests who want heat or texture.
Plating & Serving
Serve oysters chilled on the ice bed with lemon wedges. To eat: encourage guests to add a small spoon of mignonette or herb-citrus sauce (or a dab of cocktail sauce) and finish with a squeeze of lemon. If using panko, add sparingly for texture. Discard any oysters that do not smell briny/fresh or that appear dried out.
