Method

Prepare Garlic Herb Butter

Soften and mix butter

Remove butter from refrigerator and let soften to room temperature (about 30 minutes) so it is easily mixable. If short on time, cut into small cubes to speed softening.

Cook aromatics

In a small skillet over medium-low heat, melt 1 tablespoon of the butter. Add the minced shallot and sweat gently for 1–2 minutes until translucent but not browned. Add the minced garlic and cook 30–45 seconds until fragrant. Remove from heat and stir in the white wine; simmer 30 seconds until alcohol aroma diminishes. Allow to cool slightly.

Combine herb butter

In a medium bowl, add the softened butter, cooked shallot/garlic/wine mixture, chopped parsley, lemon zest, lemon juice, salt, black pepper, and Pernod (if using). Using a spatula or fork, thoroughly combine until smooth and homogenous. Taste and adjust salt, pepper, or lemon as desired. Transfer the garlic herb butter to the refrigerator to firm slightly (10–15 minutes) so it will be easier to portion onto pastry.

Assemble Escargot in Puff Pastry

Preheat oven

Preheat the oven to 400°F (200°C). Position a rack in the center. Line a baking sheet with parchment paper or a silicone mat.

Prepare puff pastry

On a lightly floured surface, unfold one puff pastry sheet and lightly roll to smooth seams. Using a 3-inch round cutter (or a knife to make 3-inch squares), cut 12 rounds (or squares) from each sheet for a total of 24 bases and 24 tops. Re-roll scraps as needed, working quickly to keep pastry cold.

Portion butter onto bases

Remove the garlic herb butter from fridge. Place approximately 1 teaspoon of the garlic herb butter in the center of each pastry base (24 bases total). If butter is too firm, microwave in 5–7 second bursts until slightly soft but not melted.

Place escargot

Place one escargot on top of the garlic butter mound in the center of each base round. Gently press the escargot into the butter so it is seated and the butter will melt around it while baking.

Top and seal

Brush the edges of each base lightly with the egg wash (beat the egg with 1 tsp cold water). Place a matching pastry round on top. Press edges together with your fingers or a fork to seal. Optionally crimp or flute the edges decoratively. Use a small knife to cut a tiny vent in the center of each top to allow steam to escape.

Egg wash and chill

Brush each assembled puff pastry escargot with the egg wash for a golden finish. Place assembled pastries on the prepared baking sheet and chill in refrigerator for 10 minutes to firm up the butter and pastry — this helps maintain flakiness while baking.

Bake

Bake in the preheated 400°F (200°C) oven for 15–18 minutes, until the pastry is puffed and deep golden brown. Rotate the pan halfway through baking for even color.

Rest and garnish

Remove from oven and let cool on the baking sheet for 3–5 minutes. Transfer to a serving platter. Sprinkle the finely chopped fresh parsley over the tops and serve with lemon wedges alongside. Serve warm so the garlic butter inside is melted and aromatic.

Notes on serving

These make a rich appetizer. One or two pastries per person (depending on appetite) is typical. If making ahead, assemble and refrigerate up to 4 hours before baking; do not bake from frozen — allow to thaw slightly and brush with egg wash before baking. Leftovers can be reheated in a 350°F (175°C) oven for 6–8 minutes to crisp.
