Prepare the Patties

In a large bowl, mix the ground beef with salt and black pepper. Form the mixture into four equal-sized patties.

Cook the Patties

Heat olive oil in a skillet over medium-high heat. Add the patties and cook for about 4-5 minutes on each side, or until desired doneness. In the last minute of cooking, place a slice of Swiss cheese on each patty to melt.

Toast the Buns

While the patties are cooking, slice the brioche buns in half and toast them lightly on a separate skillet or in a toaster.

Assemble the Burgers

Spread a generous amount of German mustard on the bottom half of each bun. Place the cooked patty with melted cheese on top, followed by a layer of sauerkraut and pickles. Top with the other half of the bun.
