1. Tenderize and brine

Place the 1 lb of alligator pieces in a bowl. Pour 1 cup buttermilk and 1 tbs hot sauce over the meat, mix to coat. Cover and refrigerate for 30 minutes to 2 hours to tenderize and flavor.

2. Prepare dry mix

In a shallow bowl or wide dish combine 1.5 cups all-purpose flour, 0.25 cups cornstarch, 0.5 cups panko (if using), 2 tsp paprika, 1 tsp garlic powder, 1 tsp onion powder, 0.5 tsp cayenne, 1.5 tsp salt and 1 tsp black pepper. Whisk to evenly distribute spices.

3. Egg wash

In a second shallow bowl beat 2 eggs until smooth. Set up a dredging station: marinated gator, egg wash, and seasoned flour mixture.

4. Coat the pieces

Remove gator from buttermilk (allow excess to drip off). Dip each piece into the egg, then press into the flour mixture, coating thoroughly. For extra crunch, press into the panko after flour. Place coated pieces on a wire rack and let rest 10 minutes to set the crust.

5. Heat oil

Pour about 4 cups vegetable oil into a deep skillet or Dutch oven to a depth of 1.5–2 inches. Heat oil over medium-high to 350°F (175°C). If you don't have a thermometer, test with a small bit of flour—it should sizzle steadily.

6. Fry

Fry the pieces in batches to avoid overcrowding. Cook 3–4 minutes per batch until golden brown and internal temperature reaches 145°F (63°C). Turn once so all sides brown evenly. Use a slotted spoon to transfer to a paper towel-lined tray or wire rack to drain.

7. Finish and garnish

Season the hot gator bites lightly with a pinch of salt. Arrange on a platter, sprinkle with 2 tbs chopped fresh parsley and serve with lemon wedges.

Remoulade Sauce

In a small bowl combine 0.5 cup mayonnaise, 1 tsp Creole or Dijon mustard, 1 tsp ketchup, 0.5 tsp prepared horseradish, 0.5 tsp hot sauce, 0.5 tsp paprika, 0.5 tsp Worcestershire sauce, 1 tsp finely chopped capers, 1 tsp finely chopped cornichon/dill pickle, 1 tbs minced shallot, 1 tsp fresh lemon juice, 0.25 tsp salt and 0.25 tsp black pepper. Stir until smooth and well combined.

Taste and adjust seasoning—add more hot sauce for heat, more lemon for brightness, or a pinch of sugar if too sharp. Chill at least 15 minutes to let flavors meld. Serve alongside warm gator bites.
