Tofu Preparation
Press the Tofu
Begin by removing the tofu from its packaging. Wrap the tofu block in a clean kitchen towel and place it on a plate. Set a heavy object (like a cast iron skillet or a few cans) on top to press out excess moisture. Let it sit for at least 30 minutes.
Cut the Tofu
Once the tofu is pressed, cut it into 1-inch cubes. This will help them cook evenly and become crispy.
Coating and Frying
Coat with Cornstarch
In a large bowl, combine the cornstarch, salt, black pepper, and garlic powder. Add the cubed tofu to the bowl and gently toss until all pieces are evenly coated.
Heat the Oil
In a large frying pan or wok, heat the vegetable oil over medium-high heat. You want enough oil to cover the bottom of the pan generously.
Fry the Tofu
Once the oil is hot (test by dropping a small piece of tofu; it should sizzle), carefully add the tofu cubes in batches to avoid overcrowding. Fry for about 4-5 minutes on each side until golden and crispy. Use a slotted spoon to remove the tofu and place it on a plate lined with paper towels to drain excess oil.
