Tater Tot Base
Prepare oil and equipment
Select a deep frying pot or a medium saucepan with high sides and place a thermometer if you have one. Pour in 1 cup oil — enough to give at least 1 to 1.5 inches depth for shallow frying (or increase for deep frying). Heat oil over medium-high heat until it reaches 350°F (175°C). If you don't have a thermometer, test by dropping one tater tot in; it should sizzle immediately and rise to the surface.
Season tater tots
While the oil heats, put the frozen tater tots in a large bowl and sprinkle with 1 tsp salt and 1/2 tsp black pepper. Toss gently to distribute seasoning. Seasoning while frozen helps the flavor adhere once they fry.
Fry the tater tots
Working in batches (do not overcrowd the pot), carefully lower a single layer of tater tots into the hot oil using a slotted spoon or spider. Fry each batch for 3–4 minutes, turning once halfway through, until tots are golden brown and crisp. If your oil temperature drops below 325°F, raise the heat slightly; if it climbs above 375°F, lower the heat to prevent burning. Transfer cooked tots to a plate lined with paper towels to drain excess oil.
Finish and keep warm
If making multiple batches, keep finished tots on a baking sheet in a single layer in a 200°F (95°C) oven to stay warm and crisp while you finish frying remaining batches.
Optional Finishes & Sauces
Parmesan and parsley finish
While tots are still hot, transfer them to a serving bowl or platter and sprinkle with 1/4 cup grated Parmesan, 1 tablespoon chopped parsley, and 1/2 teaspoon smoked paprika. Toss gently so the cheese melts slightly and distributes evenly.
Serving sauces
Serve with ketchup and/or ranch dressing in small ramekins alongside the tots. For a spicy option, mix 1/4 cup ketchup with a pinch of smoked paprika or a few drops of hot sauce.
