Form patties

Divide the ground beef into two 2-ounce portions (approx. 0.125 lb each). Gently shape each portion into a loose round patty about 2 1/2 inches in diameter and 1/4 inch thick. Do not overwork the meat.

Season

Season both sides of each patty with the fine salt and freshly ground black pepper just before cooking.

Cook

Heat a griddle or large cast-iron skillet over medium-high heat until very hot. Add a light coating of oil or spray if needed. Place patties on the hot surface and press gently with a spatula for even contact. Cook 1.5–2 minutes per side for medium (adjust time slightly for desired doneness). If using a griddle, avoid moving the patties to get a good sear.

Onion & Pickle

Caramelize onion

While the patties heat up, slice the small yellow onion into thin rings. Heat 1/2 tsp neutral oil in a small skillet over medium heat. Add the onion rings and cook, stirring occasionally, until softened and edges are golden, about 6–8 minutes. Reduce heat if they begin to brown too quickly. Remove from pan and keep warm.

Prepare pickles

Have two thin dill pickle slices ready for assembly.

Sauce

Mix sauce

In a small bowl combine mayonnaise, ketchup, yellow mustard, sweet pickle relish, white vinegar, granulated sugar (if using) and a pinch of salt. Stir until smooth and taste; adjust salt or vinegar to preference. This makes enough for both sliders.

Buns & Assembly

Toast buns

Split the mini slider buns. Spread the softened butter on the cut sides. Place buns butter-side-down on the griddle or in a skillet over medium heat and toast until golden, about 1–2 minutes.

Add cheese

When patties are nearly done, place a half slice of cheese (or folded slice to fit) on each patty and cover the pan briefly (or use a lid) for 20–30 seconds to melt the cheese.

Assemble sliders

Spread about 1/2 tablespoon of the sauce on the bottom half of each toasted bun. Place the cheesy patty on the sauce, top with a portion of the caramelized onion and two pickle slices, then crown with the bun top.

Serve

Serve immediately while hot. Repeat steps for additional sliders if making more than two.
