Fillet of Grilled Salmon served over a White Bean Salad
Preheat the grill to medium-high heat. Season the salmon fillets with olive oil, salt, black pepper, and dried oregano.
Place the salmon on the grill, skin-side down, and cook for about 6-8 minutes on each side, or until the fish flakes easily with a fork.
In a large bowl, combine the white beans, cherry tomatoes, red onion, fresh parsley, and lemon juice. Toss gently to mix and season with additional salt and pepper to taste.
Place a generous serving of the white bean salad on each plate and top with a grilled salmon fillet.
