    Prepare broth and ice

    Chill the beef or dongchimi broth in the refrigerator until cold (several hours or overnight). If you don't have chilled broth, prepare very cold water and ice. Keep about 4 cups of chilled liquid and 1 cup of ice ready in the refrigerator.

    Cook noodles

    Bring a large pot of water to a rolling boil. Add the naengmyeon noodles and cook according to package instructions (typically 2–4 minutes) until just tender. Stir gently to prevent sticking and avoid overcooking β€” noodles should be chewy.

    Rinse and chill noodles

    Immediately drain the cooked noodles and rinse thoroughly under very cold running water to stop cooking and remove surface starch. Then transfer noodles to a large bowl of ice water, swish gently for 30–60 seconds until thoroughly cooled. Lift noodles from water and drain well in a colander.

Bibim Sauce (spicy-sweet)

    Make sauce

    In a medium bowl combine gochujang, gochugaru, soy sauce, rice vinegar, sugar, sesame oil, minced garlic, and 2 tablespoons water. Whisk until smooth and glossy. Taste and adjust: add more vinegar for tang, sugar for sweetness, or water to reach a thick yet easily coatable consistency. Stir in 1 teaspoon toasted sesame seeds.

    Prepare vegetables and eggs

    Julienne the cucumber and Korean pear; thinly slice the scallion. Halve the hard-boiled eggs. If using kimchi or pickles, chop or slice into bite-sized pieces. If using cold cooked beef or chicken, cut into thin strips.

    Portion the drained cold noodles into 4 individual bowls (about 3 oz noodles per serving).

    Toss: For bibim naengmyeon, add about 1.5 tablespoons of the bibim sauce per serving (adjust to taste) to the noodles and toss thoroughly so the noodles are evenly coated. If you prefer your dish less spicy or more saucy, add extra sauce in small increments.

    If you like some broth with the spicy noodles, pour about 1/2 cup of the chilled broth or cold water around the noodles in each bowl (not over the top so it dilutes the sauce too much) and add a few ice cubes to keep everything cold. Traditionally bibim naengmyeon is served mostly dry with a little cold broth on the side.

    Top each sauced noodle mound with julienned cucumber, Korean pear, scallion, half a hard-boiled egg, and a small amount of kimchi or pickles if using. Arrange cold beef or chicken on top if using. Drizzle each portion with a few drops (~1/8 tsp) of sesame oil and sprinkle with toasted sesame seeds.

    Serve immediately with extra chilled broth on the side and extra rice vinegar or sugar for guests to adjust brightness and sweetness. To eat the traditional way, mix everything thoroughly in the bowl so toppings integrate with the sauced noodles.
