Prepare the Onions

Peel the Maui onions and slice them thinly into rings. Soak the onion rings in buttermilk for at least 30 minutes to help them soften and absorb flavor.

Mix Dry Ingredients

In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well to combine.

Coat the Onions

Remove the onion rings from the buttermilk and shake off excess liquid. Dredge the onion rings in the flour mixture, ensuring they are evenly coated.

Heat the Oil

In a deep fryer or a large pot, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil is at the right temperature.

Fry the Chips

Carefully add a few coated onion rings to the hot oil at a time, frying until they are golden brown and crispy. This should take about 2-3 minutes per batch.

Drain and Cool

Remove the fried onion chips from the oil and place them on a paper towel-lined plate to drain excess oil. Continue frying the remaining onion rings in batches.

Once all the chips are fried and drained, serve them in individual bags or bowls for a crispy and flavorful snack.
