Pickles & Marinade
Drain the pickle chips well in a colander, then pat them dry with paper towels. Spread them in a single layer and let sit 5 minutes to remove excess brine.
Place the drained pickle chips in a bowl and pour the buttermilk over them. Add hot sauce if using. Stir to coat and refrigerate for at least 15 minutes (up to 1 hour). This softens the brine surface and helps the breading adhere.
Breading
In a shallow bowl or plate, whisk the eggs until smooth.
In a separate wide bowl or rimmed baking sheet, combine flour, cornmeal, panko (if using), paprika, garlic powder, onion powder, cayenne, salt, and black pepper. Mix well so spices are evenly distributed.
Working in batches, remove pickle chips from the buttermilk, allowing excess to drip off. Dredge each chip first in the flour-cornmeal mixture, then dip into the beaten eggs, and finally press into the flour-cornmeal mixture again to create a sturdy double coating. Place breaded chips on a wire rack while you finish the rest.
Frying & Finishing
Pour oil into a heavy-bottomed skillet or Dutch oven to a depth of about 1 to 1 1/2 inches (approximately 2–3 cups depending on pan). Heat oil over medium-high heat until it reaches 350°F (175°C). If you don't have a thermometer, test with one bread crumb — it should sizzle and brown in about 30–45 seconds.
Fry the breaded pickle chips in small batches (do not overcrowd) for 1 to 2 minutes per side, or until golden brown and crisp. Use a slotted spoon or spider to transfer them to a paper towel–lined baking sheet to drain. Maintain oil temperature between 325–350°F; lower heat slightly if browning too quickly.
After frying each batch, rest briefly and then continue with remaining pickles. When all are fried, place on a clean rack for 1–2 minutes to finish crisping. Season lightly with a pinch of salt while still hot, if desired.
Ranch Dipping Sauce
If using store-bought ranch, transfer to a small serving bowl and sprinkle chopped chives on top. If making a quick homemade ranch, whisk together 1 cup mayonnaise (or 1/2 cup mayo + 1/2 cup sour cream), 1/2 cup buttermilk, 1 tsp dried dill (or 1 tbsp fresh minced), 1/2 tsp garlic powder, 1/2 tsp onion powder, salt and pepper to taste, and fold in chopped chives.
Serve the fried pickles hot with the ranch on the side for dipping.
