Seasoning and finish
Method
Rice and aromatics
- 1
Rinse the rice
Place the rice in a fine-mesh sieve and rinse under cold running water, swishing with your hand, until the water runs mostly clear (about 30–45 seconds). This removes excess surface starch and prevents clumping.
- 2
Sauté aromatics
Heat a medium saucepan over medium heat. Add the butter and let it melt and foam but not brown (about 1 minute). Add the chopped onion and sauté until soft and translucent, about 3–4 minutes. Add the minced garlic and grated ginger (if using) and cook, stirring, for 30 seconds until fragrant.
- 3
Toast spices
Stir in the ground turmeric and ground cumin (if using) and cook with the aromatics for 20–30 seconds to bloom the spices and deepen their flavor.
- 4
- 5
Simmer gently
Once boiling, reduce heat to low so the liquid is at a gentle simmer. Cover the saucepan with a tight-fitting lid and cook undisturbed for 15 minutes (for jasmine rice) or 18 minutes (for basmati), or until the water is absorbed and the rice is tender.
- 6
Steam off heat
Remove the pot from heat and keep it covered. Let the rice steam for an additional 8–10 minutes to finish cooking and firm up. Do not lift the lid during this time.
- 7
Fluff
Remove the lid and use a fork to gently fluff the rice, separating the grains.
Seasoning and finish
- 8
Stir in the fresh lime or lemon juice to brighten the flavor.
- 9
Taste and adjust seasoning with more salt or pepper if needed.
- 10
Fold in the chopped cilantro and toasted nuts (if using) for color, freshness, and a crunchy contrast.
- 11
Transfer the turmeric rice to a serving bowl, garnish with extra cilantro or a wedge of lime, and serve warm.
