Method

Chicken Wings

Prep and dry

Pat the wings very dry with paper towels. Remove any excess skin or feather remnants and trim tips if desired (save tips for stock).

In a large bowl, toss wings with baking powder, kosher salt, black pepper, and 1 tablespoon neutral oil until evenly coated. The baking powder helps crisp the skin.

Choose cooking method: deep-fry, shallow-fry, or oven-roast (directions below).

Cooking the Wings (Fry or Roast)

Heat vegetable oil in a heavy pot or deep fryer to 375°F (190°C). Fry wings in batches (do not overcrowd) for 8–10 minutes until golden-brown and internal temperature reaches 165°F (74°C). Drain on a wire rack over a sheet pan.

Shallow-frying

Heat 1/4 inch oil in a large skillet over medium-high heat. Cook wings in batches, turning, about 10–12 minutes until crisp and cooked through. Drain on paper towels or a wire rack.

Oven-roast (crispy alternative)

Preheat oven to 450°F (230°C). Arrange wings on a wire rack set over a foil-lined sheet pan. Optionally brush with 1 tablespoon neutral oil. Roast 35–45 minutes, flipping once, until skin is evenly browned and crisp and internal temp is 165°F (74°C).

Buffalo Sauce (for Buffalo + Blue Cheese Crumble)

In a small saucepan over low heat, melt 3 tablespoons butter. Add hot sauce, vinegar, Worcestershire, garlic powder, and honey. Whisk until combined and warm; do not boil. Taste and adjust heat/sweetness to preference.

Place cooked wings in a large bowl, pour buffalo sauce over them, and toss until evenly coated. Transfer to a serving platter and immediately sprinkle with crumbled blue cheese and chopped parsley if using. Serve with celery & carrot sticks and ranch dressing on the side.

Teriyaki Sesame Sauce (for Teriyaki Sesame option)

In a small saucepan combine soy sauce, mirin, brown sugar, minced garlic, and grated ginger. Bring to a gentle simmer over medium heat, stirring to dissolve sugar.

Mix cornstarch with 1 tablespoon water to make a slurry. Stir slurry into the simmering sauce and cook 1–2 minutes until sauce thickens to a glaze consistency. Remove from heat and stir in sesame oil.

Place cooked wings in a bowl, pour teriyaki glaze over them, and toss to coat. Garnish with toasted sesame seeds and sliced scallions. Serve with celery & carrot sticks and ranch dressing.

Garlic Parmesan (for Garlic Parmesan option)

In a small saucepan or microwave-safe bowl, melt 3 tablespoons butter. Stir in minced garlic and cook on very low heat for 30–45 seconds to bloom the garlic (do not brown).

Pour garlic butter over the cooked wings in a bowl and toss to coat. Immediately sprinkle with grated Parmesan, chopped parsley, and black pepper; toss once more to adhere. Serve with celery & carrot sticks and ranch dressing.

Celery, Carrots & Ranch

While wings are cooking, trim and cut celery and carrots into sticks. Chill them until serving. Place ranch dressing in a small bowl for dipping.

Arrange the sauced wings on a platter with celery and carrot sticks and a bowl of ranch dressing. Offer the three sauce options (Buffalo with blue cheese crumble, Teriyaki Sesame, or Garlic Parmesan) separately so guests can choose. For individual orders, use the corresponding sauce and garnish only.
