Prepare the Marinade
In a bowl, combine soy sauce, brown sugar, sesame oil, minced garlic, and grated ginger. Mix well until the sugar is dissolved.
Marinate the Beef
Add the sliced beef to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
Stir-Fry the Vegetables
Heat a large skillet or wok over medium-high heat. Add a little sesame oil, then stir-fry the sliced bell pepper, julienned carrot, and mushrooms for about 3-4 minutes, or until just tender. Remove from the skillet and set aside.
Cook the Beef
In the same skillet, add the marinated beef along with the marinade. Stir-fry for about 5-7 minutes, or until the beef is cooked through and slightly caramelized.
Combine and Serve
Add the stir-fried vegetables back into the skillet with the beef. Toss everything together, then top with chopped green onions and sesame seeds before serving.
