Marinate the Pork

In a large bowl, combine the white miso paste, brown sugar, soy sauce, rice vinegar, minced garlic, grated ginger, smoked paprika, and black pepper. Mix well to create a marinade. Add the pork shoulder to the marinade, ensuring it is fully coated. Cover and refrigerate for at least 4 hours, preferably overnight.

Prepare the Smoker

Soak the wood chips in water for at least 30 minutes before smoking. Prepare your smoker according to its instructions, preheating it to a temperature of about 225°F (107°C).

Smoke the Pork

Remove the pork from the marinade and let any excess marinade drip off. Place the pork shoulder in the smoker and add the soaked wood chips. Smoke for about 4 to 5 hours, or until the internal temperature reaches 195°F (90°C) for tender, pull-apart meat.

Rest and Serve

Once cooked, remove the pork from the smoker and let it rest for at least 30 minutes before slicing or shredding. Serve as a side dish or as part of a main course.
