Cook the Rice

Rinse the jasmine rice under cold water until the water runs clear. In a medium pot, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Sauté the Seafood and Vegetables

In a large skillet, heat the sesame oil over medium heat. Add garlic and ginger, sauté for 1 minute until fragrant. Add shrimp and scallops, cooking until shrimp turns pink and scallops are opaque, about 3-4 minutes. Stir in bell pepper, carrot, and frozen peas, cooking for another 3-4 minutes until vegetables are tender.

Mix and Serve

Fluff the cooked rice with a fork and add it to the skillet with the seafood and vegetables. Drizzle with soy sauce, and season with salt and black pepper to taste. Stir well to combine and heat through for 2 minutes. Serve hot, garnished with chopped green onions.
