Rinse and soak rice

Rinse 1.5 cups long-grain rice under cold water until the water runs nearly clear. Soak the rice for 15–20 minutes, then drain thoroughly.

Cook rice

In a medium saucepan, combine the drained rice, 2.75 cups water, 0.5 cup coconut milk (if using), and 1 tsp salt. Bring to a gentle boil over medium-high heat. Once boiling, reduce heat to low, cover with a tight-fitting lid, and simmer for 12–15 minutes until water is absorbed and rice is tender. Remove from heat and let rest, covered, for 10 minutes. Fluff gently with a fork and transfer to a large bowl to cool slightly.

Tempering & Aromatics

Prepare tempering

While the rice cooks, heat 2 tbsp coconut oil in a small skillet or tadka pan over medium heat. When oil is hot but not smoking, add 1 tsp mustard seeds. When they begin to pop, add 1 tsp urad dal and 1 tsp chana dal. Fry the dals until they turn light golden (about 30–45 seconds).

Add chilies & curry leaves

Add 2 dried red chilies (break them if you want milder heat) and 1 green chili (slit lengthwise) to the pan. Sizzle briefly, then add 10 fresh curry leaves and 1/4 tsp asafoetida. Stir for 10–15 seconds until the curry leaves crisp slightly and release aroma. Remove from heat to avoid burning.

Sauté onions

In a separate small skillet, add 1 tbsp of the prepared tempering oil (or 1 tbsp coconut oil) and warm over medium heat. Add 1 cup thinly sliced onion and sauté until translucent and just beginning to brown at the edges, about 5–7 minutes. Remove from heat and let cool slightly.

Combine coconut mixture

In a bowl, combine 1 cup freshly grated coconut, the sautéed onions, 2 tbsp chopped cilantro, 1 tbsp lime or lemon juice, and 1/4 tsp black pepper (if using). Mix well. Taste and adjust salt or acid as needed.

Assembling Thenga Choru

Combine rice with tempering

Pour the tempering (oil with mustard seeds, dals, chilies, curry leaves, and asafoetida) over the fluffed rice in the large bowl. Gently fold the tempering through the rice to distribute the aromatics without mashing the grains.

Fold in onion-coconut mix

Add the onion-coconut mixture to the rice and fold gently until evenly combined. Taste and adjust seasoning—add a pinch more salt or a squeeze of lime if desired. If the rice feels dry, drizzle up to 1 tbsp additional coconut oil and fold once more.

Finish and garnish

Transfer Thenga Choru to a serving bowl. Sprinkle 2 tbsp toasted coconut flakes and extra curry leaves for garnish if using. Serve warm or at room temperature alongside sambar, rasam, or a simple vegetable curry.
