Roasted Vegetable Platter
Preheat and prepare
Preheat the oven to 425°F (220°C). Line two large baking sheets with parchment paper or lightly oil them so vegetables don't stick.
Arrange vegetables in a single layer on the prepared sheets: eggplant rounds, zucchini slices, red pepper strips, onion wedges, carrot sticks, and cherry tomatoes. Keep tomatoes on a separate sheet or to one side so they don't overcook.
In a small bowl, whisk together 4 tbs olive oil, minced garlic, chopped rosemary, 1.5 tsp salt, and 1 tsp black pepper. Drizzle the mixture evenly over the vegetables and toss gently with your hands or tongs until coated.
Roast for 20–25 minutes, flipping the larger pieces (eggplant, zucchini, peppers, onion) halfway through. Roast until vegetables are golden and tender and cherry tomatoes begin to blister (about 18–25 minutes depending on oven and sheet). If any pieces are done earlier, remove them to avoid overcooking.
When roasted, transfer vegetables to a large serving platter. Let rest while you finish the other components; roasting can be done up to 1 hour ahead at room temperature.
Herbed Quinoa & Chickpeas
Cook quinoa
Place rinsed quinoa in a medium saucepan with 3 cups vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 12–15 minutes until liquid is absorbed and quinoa is fluffy. Remove from heat and let sit, covered, 5 minutes; then fluff with a fork.
In a large bowl combine cooked quinoa, warmed chickpeas, zest and juice of 1 lemon, 2 tbs olive oil, 1 tsp ground cumin, 0.75 tsp salt, 0.5 tsp black pepper, chopped parsley (1 cup) and chopped mint (1 tbs) if using. Toss until well combined. Taste and adjust seasoning. Keep warm or serve at room temperature.
Creamy Herb Yogurt Sauce
In a small bowl, whisk together 1 cup Greek yogurt, 1 tbs lemon juice, grated garlic clove, chopped dill, chopped parsley, 0.5 tsp salt, and 0.25 tsp black pepper until smooth.
Stir in 1 tsp olive oil for a glossy finish. Refrigerate until ready to serve. If made ahead, bring to room temperature 15 minutes before serving for easier dipping.
Warm Garlic Butter Sourdough
Preheat the oven to 375°F (190°C) if not still hot from roasting vegetables. Arrange bread slices on a baking sheet.
In a small bowl, mix softened butter, minced garlic, chopped parsley, and 1/2 tsp sea salt until combined. Spread a thin layer onto each slice of bread.
Bake for 8–10 minutes until bread is warmed through and edges are golden. For extra crispness, broil 1–2 minutes monitoring closely. Remove and keep warm in a towel-lined basket.
Assembly & Garnish
Arrange the roasted vegetables on a large serving board or platter. Spoon the herbed quinoa and chickpeas into a bowl and place beside the vegetables.
Place the creamy herb yogurt sauce in a small bowl for dipping. Add the warm garlic bread to the board.
Scatter optional crumbled feta, toasted pine nuts, and fresh basil over the vegetables and quinoa as desired. Drizzle balsamic glaze lightly over peppers and eggplant for brightness.
Serve family-style: encourage guests to build plates combining roasted vegetables, a scoop of quinoa-chickpeas, a smear of yogurt sauce, and bread on the side. Leftovers keep well refrigerated for 2–3 days.
