    shape and season patties

    Place the ground ribeye in a bowl. Add Worcestershire sauce and gently mix just until combined — avoid overworking the meat. Divide into two equal portions and form into patties about 3/4 to 1 inch thick, making a shallow 1/2-inch dimple in the center of each patty with your thumb to prevent doming. Season both sides of each patty with kosher salt and freshly ground black pepper.

    Heat a heavy skillet or griddle over medium-high heat until very hot. Add 1 tablespoon olive oil and swirl to coat. Place the patties on the hot surface and cook undisturbed for 3 to 4 minutes to develop a crust. Flip once and cook 2 to 4 minutes more for medium-rare to medium (internal temperature 130–140°F / 54–60°C). During the last 1 minute of cooking, place a slice of cheddar on each patty and cover the pan briefly to melt the cheese. Remove patties and rest on a plate for 3 minutes.

    While the patties cook, thinly slice the red onion and tomato. Wash and dry the lettuce leaves. Mix mayonnaise and Dijon mustard in a small bowl; spread evenly on the top and bottom buns when ready.

    Spread softened butter on the cut sides of the buns. After removing the patties, return the skillet to medium heat, place buns cut-side down for 30–60 seconds until golden and toasted. Do not burn.

    On the bottom bun, place lettuce, then the rested ribeye patty with melted cheddar, tomato slices, red onion, and pickles. Spread remaining mayo-mustard on the top bun and close. Serve immediately.

Skinny Fries (200 g)

    Preheat oven to 220°C (425°F). Spread 200 g frozen skinny fries in a single layer on a baking sheet. Drizzle 1 tablespoon oil over fries and toss to coat evenly. Sprinkle with fine sea salt, black pepper, and optional paprika. Bake for 18–22 minutes, turning once halfway through, until golden and crisp. Remove and taste for seasoning; add more salt if needed.

    Heat vegetable oil in a deep fryer or heavy skillet to 180°C (350°F). Fry the frozen fries in batches for 3–4 minutes until golden and crisp. Drain on paper towels and immediately season with salt, pepper, and paprika.
