Koha's Burger Sauce

    Make the sauce

    In a small bowl, whisk together mayonnaise, ketchup, Dijon mustard, sweet pickle relish, hot sauce (if using), garlic powder, smoked paprika, lemon juice, and salt until smooth. Taste and adjust seasoning. Cover and refrigerate while you prepare the rest (minimum 15 minutes for flavors to meld).

Fries

    Prep and soak potatoes

    Peel (optional) and cut russet potatoes into 1/4- to 1/3-inch sticks. Place cut potatoes in a bowl of cold water and soak 20–30 minutes to remove excess starch. Drain and rinse, then lay on a clean kitchen towel and pat completely dry.

    Par-fry (optional step for crispier fries)

    Heat 2 cups of oil in a heavy pot or deep fryer to 325°F (160°C). Fry potatoes in batches until tender but not brown, about 3–4 minutes. Remove with a slotted spoon to a wire rack or paper towel-lined tray.

    Final fry and season

    Increase oil temperature to 375°F (190°C). If you skipped par-frying, fry potato sticks in batches at 375°F until golden and crisp, 3–5 minutes. If par-fried, return each batch to the hot oil for 2–3 minutes until golden. Remove and drain on paper towels, sprinkle with cornstarch (lightly toss with 1 tsp cornstarch), garlic powder, paprika and kosher salt while hot so seasonings adhere. Keep warm in a low oven (200°F / 95°C) if necessary.

Burger Patties

    Form patties

    Place ground beef in a bowl. Add Worcestershire sauce, kosher salt and black pepper. Gently mix with your hands or a fork just until combined; do not overwork. Divide into 4 equal portions (about 4 oz each for 4 buns) and form into patties slightly larger than the buns, making a shallow dimple in the center of each patty so they cook evenly.

    Cook patties

    Preheat a heavy skillet or cast-iron pan over medium-high heat and add 1 tablespoon oil. When shimmering, add patties (do not overcrowd). Cook 3–4 minutes per side for medium (adjust time for desired doneness). If using cheese, add a slice to each patty in the last 30–60 seconds and cover the pan briefly to melt.

Buns & Assembly

    Prep toppings and toast buns

    While patties cook, slice tomato into 1/4-inch rounds and thinly slice red onion into rings. Butter the cut sides of the buns. Toast buns face-down in a dry skillet or on a griddle over medium heat, or in a hot pan used for the patties, until golden and slightly crisp, about 1–2 minutes.

    Assemble burgers

    Spread about 1 to 1 1/2 tablespoons of Koha's burger sauce on the bottom half of each toasted bun. Place a lettuce leaf on the sauce, then the cooked patty, tomato slice, and a few rings of red onion. Spoon another small amount of sauce on the bun top if desired. Close the burger and serve immediately with a generous portion of fries.
