1. Prepare coffee
Brew a strong, hot coffee (6 oz) immediately before assembling so it is piping hot. Pour the hot coffee into a pre-warmed heatproof glass or mug, leaving room at the top for liqueur and the cream float.
2. Add cognac and sweetener
Stir the Courvoisier VS (1.5 oz) and simple syrup (0.5 oz) into the hot coffee until the syrup is fully dissolved and the liquid is homogeneous.
3. Make cream float
Lightly sweeten the heavy cream by whisking it with 0.25 tsp granulated sugar until it just thickens slightly — it should still be pourable but hold a little body. Do not overwhip.
4. Float the cream
Hold a spoon inverted over the surface of the coffee mixture and slowly pour the slightly thickened cream (1 oz) over the back of the spoon so it gently layers on top, creating a distinct cream float.
5. Garnish and serve
Lightly dust the cream with a pinch of freshly grated nutmeg or cocoa powder. Serve immediately while coffee is hot and the cream remains separated as a float.
