KOGI MELTS

Method

KOGI MELTS

1

Prepare the Marinade

In a mixing bowl, combine soy sauce, brown sugar, gochujang, minced garlic, minced ginger, and sesame oil. Mix well until the sugar is fully dissolved.

2

Marinate the Pork

Place the pork shoulder in a large resealable plastic bag or a shallow dish. Pour the marinade over the pork, ensuring it's well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.

3

Cook the Pork

Preheat your oven to 300°F (150°C). Remove the pork from the marinade and place it in a roasting pan. Reserve the marinade. Cover the pan with foil and roast for about 3 hours, or until the pork is tender and easily shreds with a fork.

4

Prepare the Sauce

While the pork is cooking, pour the reserved marinade into a saucepan. Bring it to a boil over medium heat, then reduce to a simmer. Let it cook for about 15-20 minutes until it thickens slightly.

5

Shred the Pork

Once the pork is cooked, remove it from the oven and let it rest for 15 minutes. Shred the pork using two forks.

6

Assemble the Bowl

In serving bowls, place a generous scoop of cooked rice. Top with shredded pork, a spoonful of the thickened sauce, and kimchi. Garnish with chopped green onions, sesame seeds, and a drizzle of sriracha sauce to taste.

7

Serve

Serve immediately while hot and enjoy your spicy pork bowl!
