Method
Make Jujube Syrup (if not using pre-made)
Simmer and steep
Combine 1 cup chopped dried jujubes and 1 cup water in a small saucepan. Bring to a gentle simmer over medium heat, reduce to low, and simmer uncovered for 15 minutes to soften and extract flavor.
Strain and sweeten
Remove from heat and let steep 10 minutes. Strain solids through a fine mesh strainer, pressing to extract liquid. Return liquid to the saucepan, add 1 cup granulated sugar, and warm gently while stirring until the sugar dissolves. Cool completely. Transfer to a sealed bottle and refrigerate (keeps ~2 weeks). Yields ~1 cup syrup.
Build the Cocktail
Chill an Old Fashioned glass by filling it with ice or placing it in the freezer for a few minutes.
In a mixing glass, add 0.5 oz jujube syrup, 2 dashes Angostura bitters and 1 dash orange bitters.
Add 2 oz aged rum and 0.5 oz dark rum to the mixing glass.
Fill the mixing glass with large ice cubes and stir gently for 20–30 seconds (about 15–20 revolutions) until the drink is well chilled and slightly diluted.
Discard ice from the chilled Old Fashioned glass and place a single large ice cube into it.
Strain the stirred cocktail into the prepared glass over the large ice cube.
Express the oils from an orange peel over the drink by holding the peel skin-side down above the glass and giving it a firm twist; rub the peel around the rim and drop it into the drink as garnish.
If desired, add an extra dash of Angostura bitters on the ice surface for aroma.
