Prepare the Soft Shell Crabs
Rinse the soft shell crabs under cold water and pat them dry with paper towels. Remove the gills and any hard shell pieces.
Make the Batter
In a large bowl, whisk together the all-purpose flour, cornstarch, salt, and black pepper. Gradually add cold water to the dry ingredients, mixing until smooth.
Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Fry the Crabs
Dip each soft shell crab into the batter, ensuring they are well coated. Carefully place the battered crabs in the hot oil, frying them in batches to avoid overcrowding. Fry for about 3-4 minutes on each side or until golden brown and crispy.
Drain and Serve
Remove the crabs from the oil and place them on paper towels to drain excess oil. Serve hot with ponzu sauce on the side.
