Method

Marinate the Pork

Prepare the Marinade

In a bowl, combine grated ginger, soy sauce, minced garlic, sesame oil, and honey. Mix well.

Marinate the Pork

Add the pork sirloin to the marinade, ensuring it's well coated. Cover and refrigerate for at least 30 minutes.

Pickle the Vegetables

Prepare the Pickling Solution

In a saucepan, combine rice vinegar, sugar, and salt. Heat over medium heat until sugar and salt dissolve.

Pickle the Vegetables

Place sliced cabbage and julienned carrot in a jar. Pour the warm pickling solution over the vegetables. Let it cool, then refrigerate for at least 1 hour.

Make the Aioli

Combine Ingredients

In a bowl, mix mayonnaise, minced garlic, lemon juice, and salt until smooth. Adjust seasoning to taste.

Cook the Pork

Cook the Marinated Pork

Heat a grill or skillet over medium-high heat. Cook the marinated pork sirloin for about 4-5 minutes on each side or until cooked through. Let it rest for a few minutes before slicing.

Serve

Assemble the Dish

Serve the sliced ginger-shaved pork sirloin with pickled cabbage and carrot on the side, and drizzle aioli over the top.
