Method
Fruit
Wash and prepare fruit
Thoroughly rinse all fruit under cold running water. Pat dry with clean kitchen towels or paper towels. Drain grapes and remove any stems if desired.
Hull and slice strawberries
Remove strawberry hulls with a small paring knife, then halve larger berries so pieces are bite-sized. Leave small berries whole.
Peel and cut pineapple
Slice off the pineapple skin, remove the core, and cut the flesh into 3/4-inch cubes.
Peel and prepare kiwi and mango
Peel kiwis and slice into rounds or half-moons. Peel mango, slice away from the large pit, dice into 3/4-inch pieces.
Cube or ball cantaloupe
Cut cantaloupe in half, remove seeds, then either use a melon baller or cut into 3/4-inch cubes.
Segment orange
Use a sharp knife to cut away the orange peel and white pith, then cut between membranes to release segments (supremes). Alternatively, peel and cut into bite-sized pieces.
Assemble fruit on plate
On a large platter or individual plates, arrange fruit in groups or in an alternating colorful pattern. Place grapes in small clusters, scatter blueberries between larger pieces, and keep soft fruits (strawberries, mango) accessible for easy picking.
Garnish
Tuck fresh mint leaves around the fruit and lightly sprinkle a few whole berries on top for an attractive finish.
Dressing / Finish (optional)
Make the honey-lime dressing
In a small bowl whisk together honey, fresh lime juice, lime zest, orange liqueur (if using), and grated ginger (if using) until smooth and combined.
Dress the fruit
Drizzle 1 tablespoon of the dressing evenly over the assembled fruit (reserve the remainder to the side). Gently toss only if serving family-style in a bowl; if on a platter, lightly brush or drizzle so fruit maintains shape and color.
Finish and season
Lightly sprinkle flaky sea salt over the dressed fruit — this brightens flavors. If desired, add a few more mint leaves on top.
Serve immediately at cool room temperature or chilled. Leftovers: store any extra dressing separately and refrigerate fruit in an airtight container up to 48 hours for best texture and color.
