Beyond Burger Patties

Bring patties to temperature

Remove the Beyond Burger patties from the refrigerator and let sit at room temperature for 10 minutes. This helps them cook evenly.

Preheat pan or grill

Preheat a large skillet or grill over medium-high heat. If using a skillet, add 1 tbs olive oil and let it heat until shimmering but not smoking.

Season patties

Brush or rub each patty lightly with olive oil. Season both sides with about 1/2 teaspoon salt and 1/2 teaspoon black pepper per patty (total amounts listed in ingredients).

Cook patties

Place patties on the hot skillet or grill. Cook for 3 minutes on the first side without pressing. Flip and cook for another 3 minutes on the second side. If using vegan or regular cheese, place a slice on each patty about 1 minute before they finish cooking, cover the pan briefly to melt.

Check and rest

Beyond Burgers are best cooked to an internal temperature of 165°F (74°C) per manufacturer guidance; use a thermometer to check. Once cooked, transfer patties to a plate and let rest 2 minutes.

Burger Assembly

Prepare buns

Split the burger buns. Spread 1/2 tablespoon butter or vegan butter on the cut sides of each bun. Place buns, cut-side down, on the skillet or grill for 30–60 seconds until lightly toasted and golden. Remove and set aside.

Slice vegetables

While patties cook or rest, slice the tomato into 3–4 mm (about 1/8–1/4 inch) slices. Thinly slice the red onion into rings. Tear or place one lettuce leaf per burger and set out pickle slices.

Make sauce

In a small bowl, mix 2 tbs mayo, 1 tsp mustard, and 1 tsp ketchup (adjust to taste). This yields a simple burger sauce; spread about 1 tbsp on each bun bottom.

Assemble burgers

Place the bottom bun on a plate, spread burger sauce, add lettuce, then the cooked Beyond patty with melted cheese (if using). Top with tomato slice(s), red onion rings, and 3 pickle slices. Spread a thin layer of mayo on the top bun and place it on the burger.

Serve

Serve immediately with fries, wedges, or a side salad. Add hot sauce to taste if desired.

If serving fries or potato wedges, prepare according to package instructions or roast at 425°F (220°C) tossed with oil and salt for 25–35 minutes, turning halfway, until golden and crisp. Season with salt and serve alongside the burgers.
