    Preheat the oven to 400°F (200°C). Line a rimmed baking sheet with aluminum foil for easier cleanup and place a wire rack on top of the sheet. Arrange the 12 bacon strips in a single layer on the rack so air circulates around them; they can be close but should not overlap. Place the sheet on the middle rack and bake for 15–22 minutes, checking at 12–15 minutes for desired doneness. Thicker slices will take toward the higher end; standard thick-cut usually takes about 18–20 minutes for crisp edges with some chew. When bacon reaches your preferred color and crispness, remove the sheet from the oven.

    Pan-fried bacon (alternative)

    Place a large skillet (cast-iron preferred) over medium heat. Lay bacon strips in a single layer without overlapping. Cook 4–6 minutes on the first side until the edges begin to brown, then flip each strip and cook an additional 3–5 minutes until done to your liking. Adjust heat to avoid burning; reduce to medium-low if the bacon is browning too quickly. Transfer cooked bacon to a plate lined with paper towels to drain.

    Grill or broiler option

    For a smoky char, cook bacon on a preheated grill over medium heat or under the broiler on a foil-lined pan set 6–8 inches from the heat. Watch closely and flip once; total cook time will be 6–10 minutes depending on thickness.

    Sweet-and-pepper glaze (optional)

    If using brown sugar and black pepper: while bacon is hot on the baking sheet or skillet, sprinkle the 2 tablespoons brown sugar evenly over the strips and then grind the 1 teaspoon black pepper on top. If you prefer a sticky glaze, brush 2 tablespoons maple syrup over the bacon immediately after sprinkling sugar and pepper. Return to the oven for 1–2 minutes (or back to the pan on very low heat for 30–60 seconds) just until sugar melts and becomes glossy—watch carefully to prevent burning. Remove and let rest 1 minute; sugar will set slightly as it cools.

    Finish and serve

    Transfer bacon to a serving platter and, if using, sprinkle with 1 tablespoon chopped fresh parsley for color. Serve immediately as a side. Use a slotted spatula to drain excess fat before plating if desired.

    Store cooled leftover bacon in an airtight container in the refrigerator for up to 4 days. Reheat in a 350°F (175°C) oven on a baking sheet for 5–8 minutes or briefly in a skillet over medium heat to re-crisp.
