Directions
Roast the Sweet Potatoes
Preheat the oven to 400°F (200°C). Peel and cube the sweet potatoes. Toss them with olive oil, salt, and pepper, then spread on a baking sheet. Roast for 25-30 minutes until tender.
Prepare the Spiced Red Onion Marmalade
Thinly slice the red onion. In a pan, heat olive oil over medium heat. Add the onions and sugar, cooking until the onions are soft and caramelized, about 10 minutes. Stir in balsamic vinegar and cook for another 2-3 minutes. Season with salt and pepper to taste.
Assemble the Sandwich
Toast the sourdough bread slices. Spread goat cheese on one side of each slice. Layer with roasted sweet potatoes, arugula, and spiced red onion marmalade. Top with another slice of bread, goat cheese side down.
Serve
Cut the sandwiches in half and serve immediately.
