Danish Pastry
Method
Preparation
Make the Danish Dough
In a large bowl, combine the flour, sugar, and salt. In a small saucepan, heat the milk until warm. Remove from heat and stir in the yeast, letting it sit for 5 minutes until foamy. Add the egg and melted butter, then pour into the flour mixture. Knead until smooth and elastic.
Chill the Dough
Wrap the dough in plastic wrap and refrigerate for at least 1 hour, or overnight for best results.
Prepare the Berry Filling
In a saucepan over medium heat, combine mixed berries, sugar, cornstarch, and lemon juice. Cook until the mixture thickens and bubbles, about 5-7 minutes. Remove from heat and let cool.
Roll Out the Dough
On a floured surface, roll out the chilled dough into a rectangle about 1/4 inch thick. Cut into squares or rectangles.
Assemble the Danish
Place a spoonful of the berry filling in the center of each dough square. Fold the corners toward the center and pinch to seal.
Bake the Danish
Preheat the oven to 375°F (190°C). Place the filled Danish on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown.
