Toast the rustic bread slices until they are golden brown and crispy.

Slice the Onions

Thinly slice the red onion and soak in cold water for about 10 minutes to mellow the flavor. Drain and set aside.

In a small bowl, soften the cream cheese with a fork, mixing until smooth. You may add a splash of lemon juice for extra flavor, if desired.

Spread a generous layer of cream cheese on each slice of toasted bread. Top with slices of cold smoked salmon.
