In a medium saucepan, bring 4 cups of water and 1 tsp of salt to a boil. Slowly stir in the grits, reduce the heat to low, and cook for about 20-25 minutes, stirring occasionally until thickened. Remove from heat and stir in butter and cheddar cheese until melted and creamy.

Cook the Shrimp

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add shrimp, cayenne pepper, and black pepper. Cook for about 3-4 minutes, or until shrimp are pink and cooked through.

Prepare the Lobster Tail

While the shrimp is cooking, prepare the lobster tail by boiling or steaming until cooked (about 5-7 minutes). Remove the shell and chop the lobster meat into bite-sized pieces.
