In a medium saucepan, bring chicken broth to a boil. Slowly whisk in grits and reduce heat to low. Cook for 20-25 minutes until thickened, stirring frequently.

Cook the Lobster Tail

Preheat the grill or broiler. Cut the lobster tails lengthwise and brush with melted butter. Grill for about 5-7 minutes or until the meat is opaque and cooked through.
