1. Cook Quinoa

Rinse quinoa under cold water. In a medium saucepan, combine quinoa and 2 cups of water. Bring to a boil, reduce to a simmer, cover, and cook for 15 minutes or until water is absorbed. Fluff with a fork and set aside.

2. Prepare Vegetables

While the quinoa is cooking, chop the cherry tomatoes, dice the avocado, and rinse the spinach or kale. If using frozen corn, cook according to package instructions.

3. Mix Dressing

In a small bowl, whisk together olive oil, lime juice, cumin, salt, and black pepper.

4. Assemble Bowl

In a large bowl, combine cooked quinoa, black beans, cherry tomatoes, corn, spinach or kale, and diced avocado. Drizzle the dressing over the top and toss gently to combine. Garnish with fresh cilantro if desired.
