Cooking Instructions

1

Marinate the Chicken

In a bowl, coat the chicken thighs with jerk seasoning and let marinate for at least 30 minutes.

2

Sauté the Vegetables

In a large pot, heat olive oil over medium heat. Add the diced onion, minced garlic, sliced carrots, sliced celery, and diced bell pepper. Sauté for about 5-7 minutes until softened.

3

Cook the Chicken

Add the marinated chicken thighs to the pot and cook for about 5 minutes until browned on all sides.

4

Add Broth and Simmer

Pour in the chicken broth and bring to a boil. Reduce heat and let it simmer for about 20 minutes, or until the chicken is cooked through.

5

Shred the Chicken

Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.

6

Add Noodles and Coconut Milk

Stir in the egg noodles and coconut milk. Cook for an additional 8-10 minutes, or until the noodles are tender.

7

Season and Serve

Stir in lime juice, green onions, salt, and pepper. Adjust seasoning to taste and serve hot.
