Prepare Chicken

Cook the Chicken

In a skillet, heat 1 tablespoon of olive oil over medium heat. Season the chicken breast with salt and black pepper. Place the chicken in the skillet and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from heat and let it rest for a few minutes before slicing.

Assemble the Salad Base

In a large mixing bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, and feta cheese. Toss gently to mix the ingredients.

Slice the Chicken

After the chicken has rested, slice it into thin strips and set aside.

Make Dressing

Combine Dressing Ingredients

In a small bowl, whisk together 2 tablespoons of olive oil, red wine vinegar, honey, Dijon mustard, salt, and black pepper until well combined.

Combine and Serve

Combine Salad and Chicken

Add the sliced chicken on top of the salad base. Drizzle with the dressing and toss gently to combine.
