    Prepare ingredients and glass

    If using a rocks glass, chill it by filling with ice water while you mix the drink. Measure out bourbon, fresh lemon juice, and simple syrup. If using egg white, separate one egg and set aside the white. Have angostura bitters and garnishes ready.

    Dry shake (if using egg white)

    Add bourbon, fresh lemon juice, simple syrup, and the egg white to a cocktail shaker (no ice). Seal the shaker and shake vigorously for 12–15 seconds. This emulsifies the egg white and creates a frothy texture.

    Wet shake

    Add a generous handful of ice to the shaker (about 1 cup). Seal and shake again for 10–15 seconds until the outside of the shaker is cold and well-chilled. If you skipped egg white, combine the bourbon, lemon juice, and syrup with ice and shake 12–15 seconds.

    Strain and serve

    Discard the ice water from the chilled glass (if used). Double-strain the cocktail into the rocks glass over fresh ice using a Hawthorne strainer and a fine mesh strainer if available. This removes small ice shards and any egg solids.

    Finish and garnish

    Dash the angostura bitters on top of the foam (if egg white used) or on the drink surface. Optionally use a toothpick to create a simple design with the bitters. Garnish with a lemon wheel or twist and a maraschino cherry if desired.

    Serve immediately. Stirring is not necessary; sip and enjoy.
