Prepare glass

If you like the cocktail slightly chilled without dilution, place a coupe or rocks glass in the freezer for 5–10 minutes before mixing. Otherwise proceed with a room-temperature glass.

Combine ingredients

Add bourbon (2 oz), peach liqueur (0.5 oz), fresh lemon juice (0.75 oz), simple syrup (0.5 oz), smoked or tea-infused honey (0.5 tbsp) if using, and 2 dashes of Angostura bitters into a cocktail shaker.

Add ice and shake

Fill the shaker with about 1 cup of ice. Secure the lid and shake vigorously for 10–15 seconds, until the exterior of the shaker is frosty and the mixture is well chilled and slightly diluted.

Strain

Double-strain the cocktail into the chilled coupe or a rocks glass filled with fresh ice (if you prefer it on the rocks) using a Hawthorne and fine mesh strainer to remove small ice chips and any peach pulp.

Top (optional)

If you prefer a lightly effervescent finish, top the drink with about 1 oz club soda and gently stir once with a bar spoon to combine (do not over-stir).

Garnish

Express a lemon twist over the drink by holding the twist over the surface and pinching to release oils, then rim the glass with it and drop it into the drink or rest it on the rim. Add a fresh peach slice or dehydrated peach wheel on the rim or floated on top for aroma and visual appeal.
