Pineapple Cordial Base

Prepare pineapple
Cut the pineapple into chunks and place 1 1/2 cups of the pieces into a blender or food processor. Reserve any extra pineapple for snacking.

Make quick syrup
Combine 1 cup sugar and 1 cup water in a small saucepan. Warm over medium heat, stirring occasionally, until the sugar fully dissolves and the mixture just reaches a light simmer (about 3–4 minutes). Remove from heat.

Blend fruit and syrup
Add 3–4 tablespoons of the warm syrup to the pineapple in the blender to help puree smoothly. Blend until very smooth, about 30–45 seconds.

Combine and macerate
Pour the pineapple puree into a fine-mesh sieve set over a bowl. Press with the back of a spoon to extract as much juice as possible (you should get roughly 1 cup of puree/juice). Discard solids or reserve for another use (smoothies, baking). Stir the pineapple liquid into the remaining warm syrup.

Add acid and aromatics
While the syrup is still warm, stir in 2 tablespoons fresh lime juice, 1 tablespoon lemon juice, 1/2 teaspoon vanilla extract (or seeds from a split 1-inch piece of vanilla bean), and a pinch of fine salt. Taste and adjust acid or sweetness as desired — cordial should be slightly sweet and pleasantly tart.

Cool
Let the cordial base cool to room temperature (about 30–45 minutes). Skim any foam from the surface with a spoon.

Settle and strain
Transfer the mixture to a clean jar and refrigerate undisturbed for 6–12 hours. The egg proteins will coagulate and trap fine solids. After settling, carefully decant the clear cordial through a fine sieve lined with cheesecloth or a coffee filter into a clean bottle. Discard solids and used filter material.

Dilute and serve
To serve as a non-alcoholic drink, mix 1 part pineapple cordial with 3–4 parts chilled filtered water or club soda (adjust to taste). Serve over ice if desired and garnish with a lime wedge or a pineapple chunk. For cocktails, use 1 part cordial to 2–3 parts spirits/mixers depending on recipe.

Storage note
Keep refrigerated. If mold or off-odors appear, discard. For longer storage, freeze cordial in an ice cube tray and use cubes to flavor drinks.
