    Chill glass

    Place a highball or Collins glass in the freezer for a few minutes or fill it with ice water while you prepare the cocktail to chill it.

    Combine base ingredients

    In a cocktail shaker, add the rye whiskey (2 oz), fresh lemon juice (0.75 oz), simple syrup (0.5 oz) and 2 dashes of Angostura bitters.

    Add ice and shake

    Fill the shaker with ice (enough to nearly fill it), secure the lid and shake vigorously for 8–10 seconds until well chilled and slightly diluted.

    Prepare serving glass

    Discard the ice water from the chilled glass if used. Fill the chilled highball/Collins glass about two-thirds full with fresh ice (approximately 1 cup).

    Strain and top

    Double-strain the shaken mixture into the prepared glass over fresh ice to keep out small ice shards and pulp. Immediately top with about 3 oz ginger beer, pouring gently to preserve carbonation.

    Finish and garnish

    Give the drink a gentle stir (1–2 revolutions) to combine ginger beer with the shaken base and bitters without flattening the fizz. Garnish with a lemon wheel or twist on the rim and, if desired, a piece of candied ginger pierced on a pick.

    Serve immediately while ginger beer is effervescent. Encourage sipping to enjoy the interplay of spicy ginger, bright lemon and the rye's warmth.
