    Chill glass

    Place a Champagne flute or coupe in the refrigerator or fill it with ice water to chill while you prepare the cocktail (about 5 minutes).

    Combine base ingredients

    Into a cocktail shaker, add gin (1.5 oz), fresh lemon juice (0.75 oz), and simple syrup (0.5 oz).

    Add ice and shake

    Add ice to the shaker (about 1 cup). Secure the lid and shake vigorously for 10–15 seconds, until the outside of the shaker is very cold and slightly frosted.

    Prep glass and strain

    Dump the ice water from the chilled flute (if used). Double-strain the shaken mixture into the chilled Champagne flute using a Hawthorne strainer and a fine mesh strainer to catch ice shards and pulp.

    Top with sparkling wine

    Carefully top the strained cocktail with about 3 oz of chilled dry Champagne or sparkling wine. Pour slowly down the side of the flute to preserve bubbles and avoid foaming over.

    Garnish and serve

    Express a lemon twist over the drink by holding the twist skin-side down above the flute and giving it a quick snap to release oils, then rub the rim with the twist and drop it into the glass as a garnish. Serve immediately.
