Cucumber Margarita

Method

Cucumber Margarita

  1. 1

    Prepare glass

If you want a salted or Tajín rim, rub the lime wedge around the glass rim. Pour the coarse salt or Tajín onto a small plate and dip the wet rim into it so the seasoning adheres. Set glass aside.

  2. 2

    Make cucumber juice

Trim the cucumber and roughly chop. Place the chopped cucumber in a blender and puree until smooth (about 20–30 seconds). Pour the puree through a fine mesh sieve or cheesecloth over a bowl and press with the back of a spoon to extract about 1/2 cup of juice. Discard solids.

  3. 3

    Combine cocktail

In a cocktail shaker add the cucumber juice, fresh lime juice, silver tequila, orange liqueur, and agave syrup. Add the ice for shaking.

  4. 4

    Shake

Secure the shaker lid and shake vigorously for 12–15 seconds until the outside of the shaker is frosty and well-chilled.

  5. 5

    Strain and serve

Fill the prepared glass with fresh ice. Double-strain the shaken mixture into the glass using a cocktail strainer and a fine mesh sieve to catch any small bits of cucumber and ice shards.

  6. 6

    Garnish

Slide a cucumber slice or ribbon into the drink and float a lime wheel on top. Serve immediately.

  7. 7

    Notes

Adjust sweetness with additional agave syrup (add 1/4 oz at a time) if desired. For a lighter cocktail, use 1.5 oz tequila and 0.5 oz club soda as a top-up.
